Tallow candles have fallen into disuse because of the bad smell they give off and because they are quickly consumed. They are made with ox or mutton fat. They are soft, very greasy to the touch, and give a sooty flame.

From John Falkner: And on tallow candles ... at the Castle Museum in York, where they have a street of original shops and industries - a sort of Yorkshire Skansen - there is a tallow candle makers shop and workshop, dipping troughs and all. Might be worth a visit, when such things become possible. It's my home city, and I'd be happy to see you there - History: Roman, Viking (Anders would be welcome), Saxon, Norman-French and once the capital of England. (English)
